An easy and delicious meal option for when you want something a bit different, these pancakes are also the perfect way to get some extra nutrients in.

Eva's Blackcurrant Pancakes Recipe:
1 cup of self raising flour
1 cup of soy milk (or preferred plant-based milk)
1 teaspoon of vanilla essence
1 heaped teaspoon of Eva's Blackcurrant Powder
Mix all ingredients together in a bowl, cook on a medium heat with butter or nuttelex, serve with maple syrup and banana or any other favourite toppings, and enjoy!
